How to rehydrate dried cod fish maw:
Soaking: Place the dried cod fish maw in a pot of fresh water and soak for 2–4 hours until soft. Rinse thoroughly with clean water before cooking.
For Soup or Broth: Add the soaked fish maw to a pot with meat (chicken, pork or seafood) and herbs. Simmer over low heat for 1–2 hours until tender and gelatinous, allowing it to absorb the flavors of the soup.
For Braised Dishes: After soaking, cut the fish maw into desired pieces. Braise with mushrooms, abalone sauce, or other seasonings over low heat until soft and flavorful.
Note:
The pot must be clean and oil-free during use to avoid contamination. It is also advisable to rinse the fish maws or fish tubes after handling them. This is to avoid spoilage due to cross-transmission of bacteria by contaminated hands. The above steps are to serve as a guide only.
